Method
Prepare Burger Patty
Cook Quinoa
Rinse 0.5 cups of quinoa under cold water. In a small saucepan, combine the quinoa with 1 cup of water and bring it to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes or until all the water is absorbed. Fluff with a fork and set aside.
Mash Black Beans
In a large mixing bowl, drain and rinse 1 cup of black beans. Use a fork or potato masher to mash the beans until mostly smooth, leaving some chunks for texture.
Combine Ingredients
Add the cooked quinoa, 0.5 cups of oats, 0.25 cups of finely chopped onion, 2 minced garlic cloves, 1 tsp cumin powder, 1 tsp paprika, 0.5 tsp salt, and 0.25 tsp black pepper to the mashed black beans. Mix until well combined.
Form Patties
Divide the mixture into 2 equal portions and shape each portion into a burger patty.
Prepare Fries
Preheat Oven
Preheat your oven to 425°F (220°C).
Season Fries
In a mixing bowl, toss the cut potatoes (2 large) with 2 tbs of olive oil, 0.5 tsp salt, 0.5 tsp paprika, and 0.25 tsp black pepper until evenly coated.
Bake Fries
Spread the seasoned fries in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until crispy and golden.
Assemble Burger
Prepare Toppings
Slice the tomato (1 medium) and avocado (1 medium).
Assemble
Spread 0.25 cups of vegan mayonnaise on the bottom half of each burger bun. Place the cooked patty on top, followed by lettuce leaves (4 pieces), sliced tomato, and sliced avocado. Top with the other half of the bun.
