Prepare the Lamb
Season the lamb shanks with salt and black pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the lamb shanks on all sides until browned, about 5-7 minutes. Remove and set aside.
Add Remaining Ingredients
Add the chicken broth, canned tomatoes, rosemary, thyme, and return the lamb shanks to the pot. Bring the mixture to a boil.
Braise the Lamb
Reduce the heat to low, cover the pot, and let it simmer for 2-3 hours, or until the lamb is tender and falls off the bone.
Serve
Remove the lamb shanks from the pot and let them rest for a few minutes. Serve with the rich sauce spooned over the top.
