Prepare the Salmon

Cut the salmon fillet into medallions, about 2.5 cm thick. Season with salt and black pepper.

Sauté Aromatics

In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened, about 3-4 minutes.

Make the Broth

Add the canned diced tomatoes and vegetable broth to the pot. Bring to a simmer.

Cook the Salmon

Gently place the salmon medallions into the simmering broth. Cover and cook for about 6-8 minutes, or until the salmon is cooked through and flakes easily.

Finish the Dish

Stir in the chopped fresh basil and lemon juice. Adjust seasoning with salt and pepper to taste.

Ladle the tomato broth into bowls and place the salmon medallions on top. Serve hot.
