Gelato Base Preparation
Heat Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling.
Whisk Sugar and Yolks
In a separate bowl, whisk together the granulated sugar and egg yolks until the mixture is pale and slightly thickened.
Cook the Mixture
Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon.
Add Flavoring
Remove from heat and stir in the vanilla extract and a pinch of salt. Allow the mixture to cool.
Flavoring and Churning
Add Flavorings
Once cooled, divide the gelato base into separate bowls if making multiple flavors. Mix in your chosen fresh fruit, Nutella, or crushed nuts to each bowl.
Churn the Gelato
Pour the flavored mixtures into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Freeze the Gelato
Transfer the churned gelato into airtight containers and freeze for at least 4 hours or until firm.
Serving
Scoop and Serve
Once the gelato is firm, use an ice cream scoop to serve two scoops per bowl. Enjoy your artisanal gelato!
