Method

Preparation

1

Marinate the Lamb Chops

In a large bowl, combine olive oil, minced garlic, chopped fresh rosemary, chopped fresh thyme, salt, black pepper, and lemon juice. Mix well. Add the lollipop lamb chops and ensure they are evenly coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.

Cooking

2

Heat the Pan

In a large skillet or frying pan, heat over medium-high heat. Allow the pan to get hot, which should take about 2-3 minutes.

3

Cook the Lamb Chops

Remove the lamb chops from the marinade, letting excess marinade drip off. Place the chops in the hot pan, making sure not to overcrowd them. Cook for about 3-4 minutes on one side until they develop a golden-brown crust.

4

Flip and Finish Cooking

Flip the lamb chops and cook for an additional 3-4 minutes for medium-rare, or until they reach your desired doneness. Use a meat thermometer to check the internal temperature; it should read 145°F (63°C) for medium-rare.

5

Rest the Chops

Once cooked, remove the lamb chops from the pan and let them rest on a plate for about 5 minutes. This allows the juices to redistribute.

Serving

6

Plate the Dish

Arrange the rested lamb chops on a serving platter. Garnish with chopped fresh parsley and serve with lemon wedges on the side for squeezing over the chops.
