Warm and crisp tortillas

Heat a large skillet or griddle over medium-high heat. Add 1 tbs vegetable oil and brush to coat. Working in batches, warm 2 tortillas at a time for about 20–30 seconds per side until pliable and lightly toasted with small brown spots. For crispy tacos, fry each tortilla in the oil for 30–45 seconds per side until golden and slightly crisp; drain briefly on paper towels. Keep warmed tortillas wrapped in a clean kitchen towel to stay soft and pliable.

Season tortillas lightly with a pinch of salt while warm and set on a serving platter. Tear cilantro leaves from stems and keep with lime wedges and hot sauce for assembly.

Whisk eggs

Crack the eggs into a bowl. Add milk (or half-and-half), 1/2 tsp kosher salt, and 1/4 tsp black pepper. Whisk vigorously until combined and slightly frothy (about 20–30 seconds).

Cook eggs

Heat a nonstick skillet over medium-low heat. Add 1 tbs unsalted butter and allow it to foam but not brown. Pour in the egg mixture. Let set for 10–15 seconds, then with a silicone spatula gently push the eggs from the edges toward the center, forming soft curds. Continue folding and moving the eggs every 10–15 seconds until mostly set but still moist, about 2–4 minutes total. Remove from heat while slightly underdone — residual heat will finish them. Taste and adjust seasoning if needed.

Prepare chorizo/sausage

If using raw chorizo or sausage, cook in a separate skillet over medium heat, breaking into small pieces, until fully cooked and browned, about 6–8 minutes. Drain excess fat on paper towels. If using pre-cooked, warm gently in a skillet for 2–3 minutes.

Prep fresh fillings

While eggs cook, finely chop the jalapeño (remove seeds for less heat), dice the tomato, shred the cheese if needed, and dice the avocado. If using pickled red onions, have them drained and ready.

Assemble tacos

Lay a warm tortilla flat. Place about 2–3 tbs of cooked chorizo/sausage in the center, then add a generous spoonful (about 2–3 tbs) of scrambled eggs. Top with 1–2 tbs shredded cheddar, a spoonful of diced tomato, a few pieces of diced avocado, and a scattering of chopped cilantro. Add a little pickled red onion if using, and a few drops of hot sauce. Squeeze a wedge of lime over the filling to taste.

Serve immediately while the eggs are hot and tortillas are warm. Provide extra lime wedges, cilantro, and hot sauce at the table.
