Marinate the Chicken

In a large bowl, combine the chicken thighs, lime juice, garlic, ginger, cumin, paprika, turmeric, salt, and black pepper. Mix well and let it marinate for at least 30 minutes.

Prepare the Vegetables

Chop the bell peppers, red onion, and cilantro. Set aside for later use.

Cook the Chicken

In a large skillet over medium heat, add a little oil. Once hot, add the marinated chicken thighs and cook for 5-7 minutes per side until golden brown and cooked through.

Add Coconut Milk

Once the chicken is cooked, pour in the coconut milk and bring to a gentle simmer. Stir in the chopped bell peppers and red onion, and let it cook for another 10 minutes until the vegetables are tender.

Plate the Dish

Serve the coconut chicken over a bed of cooked rice. Garnish with fresh cilantro and sliced avocado on the side.
