Mix the Sauce

In a small bowl, combine soy sauce, hoisin sauce, sesame oil, rice vinegar, minced ginger, and minced garlic. Whisk until well blended and set aside.

Prepare the Filling

In a large mixing bowl, combine ground pork or chicken, diced shiitake mushrooms, chopped green onions, grated carrot, finely chopped cabbage, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.

Assemble the Wontons

Place a wonton wrapper on a clean surface. Add about 1 tablespoon of the filling mixture in the center of the wrapper. Moisten the edges of the wrapper with water, fold it over to create a triangle, and press the edges firmly to seal. Repeat the process with the remaining wrappers and filling.

Cook the Wontons

Bring a large pot of water to a boil. Carefully drop the assembled wontons into the boiling water, and cook for about 4-5 minutes or until they float to the surface and are cooked through. Remove them with a slotted spoon and drain. Alternatively, you can steam the wontons for about 6-8 minutes.
