Prepare the Herb Oil

In a small saucepan, combine the extra virgin olive oil, crushed garlic cloves, fresh basil leaves, and chopped parsley. Heat over low heat for about 5 minutes, allowing the flavors to meld. Remove from heat and set aside to cool.

Prepare the Vegetables

Preheat the oven to 200°C (400°F). In a baking dish, combine the Castelvetrano olives, halved cherry tomatoes, and whole Calabrian chiles. Drizzle the cooled herb oil over the vegetables and toss to coat evenly.

Bake the Feta and Vegetables

Place the block of French feta cheese in the center of the baking dish with the vegetables. Drizzle additional herb oil over the feta cheese. Bake in the preheated oven for 25-30 minutes, or until the feta is soft and slightly golden, and the tomatoes have burst.

Serving

Serve with Focaccia

Remove the baking dish from the oven and let it cool slightly. Serve warm with slices of focaccia bread for dipping into the melted feta and roasted vegetables.
