Prepare the Ingredients
Peel and dice the mangoes into small pieces. Finely chop the red onion and garlic cloves. Grate the ginger.
Cooking
Combine Ingredients
In a medium saucepan, combine the diced mango, chopped red onion, minced garlic, grated ginger, cumin, coriander, turmeric, red chili flakes, apple cider vinegar, water, brown sugar, and salt.
Cook the Chutney
Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low and let it simmer uncovered for about 30 minutes, stirring occasionally, until the mango is soft and the chutney has thickened.
Cool and Store
Remove the chutney from heat and let it cool to room temperature. Transfer it to a clean jar or airtight container and refrigerate. The chutney will keep for up to two weeks.
