Pasta Preparation
Make the Pasta Dough
In a large bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs. Gradually mix the flour into the eggs using a fork until a dough forms.
Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Prepare the Filling
In a bowl, mix together the ricotta cheese, Parmesan cheese, cooked and chopped spinach, nutmeg, and season with salt and black pepper to taste. Set aside.
Assembly
Roll Out the Pasta
After resting, divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin.
Fill the Pasta
Cut the pasta sheets into squares. Place a small spoonful of filling in the center of each square. Fold the pasta over to form a triangle and press the edges to seal.
Sauce Preparation
Make the Tomato Sauce
In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add tomato sauce and bring to a simmer. Season with salt and stir in fresh basil.
Cooking and Serving
Cook the Filled Pasta
Bring a large pot of salted water to a boil. Gently add the filled pasta and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon.
Serve
