Preparation
Prepare the potatoes
Wash and peel the Russet potatoes. Cut them into even strips, approximately 1/4 inch thick.
Dry the fries
Drain the water and pat the potato strips dry using a clean kitchen towel or paper towels.
Heat the oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Ensure there is enough oil to fully submerge the fries.
Fry the potatoes
Carefully add a batch of fries to the hot oil. Fry them for about 4-5 minutes or until they are golden brown and crispy. Do not overcrowd the pot.
Drain and season
Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with sea salt to taste.
Serve
Serve the classic fries hot, either as a side dish or a snack.
