Mousse Preparation
Melt the Chocolate
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.
Beat the Eggs
In a separate bowl, beat the large eggs and granulated sugar together using an electric mixer on medium speed for about 5 minutes, or until the mixture is thick and pale.
Combine Mixtures
Gently fold the melted chocolate mixture into the egg mixture until well combined. Add the vanilla extract and a pinch of salt, and mix until incorporated.
Chill the Mousse
Pour the mousse mixture into serving cups or a large bowl. Cover with plastic wrap and refrigerate for at least 4 hours or until set.
Whipped Cream Preparation
Whip the Cream
In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip on medium-high speed until soft peaks form.
Serve
Once the mousse has set, remove it from the refrigerator. Top each mousse serving with a dollop of whipped cream before serving.
