Make the Sugar Syrup

In a medium saucepan, combine the sugar and water. Heat over medium heat, stirring occasionally until the sugar has completely dissolved. Remove from heat and let it cool.

Infuse the Grappa

In a large glass jar, combine the Nardini Grappa, cooled sugar syrup, cinnamon stick, star anise, cloves, dried orange peel, wormwood, and gentian root. Seal the jar tightly and shake gently to mix. Let the mixture infuse in a cool, dark place for at least 2 weeks, shaking the jar gently every few days.

Strain and Sweeten

After 2 weeks, strain the infused grappa through a fine mesh sieve into a clean bottle to remove the solids. Add the scraped seeds from the vanilla bean and honey to the strained liquid. Stir well until the honey is fully dissolved.

Transfer the Amaro Nardini into a decorative bottle. Seal and refrigerate. Let it rest for another week before serving for the best flavor.
