Cook the Chorizo

In a skillet over medium heat, add the chorizo sausage. Cook for about 5-7 minutes, breaking it apart with a spatula until it’s browned and cooked through. Remove from skillet and set aside.

Scramble the Eggs

In the same skillet, add 1 tablespoon of olive oil. Crack the eggs into a bowl, add salt and black pepper, and whisk until combined. Pour the egg mixture into the skillet and cook, gently stirring, until the eggs are fully set but still moist, about 3-4 minutes.

Combine Filling

Add the cooked chorizo back into the skillet with the scrambled eggs. Stir in the shredded cheese until melted and well combined.

Warm the Tortillas

In a separate skillet or on a griddle, lightly warm the corn tortillas over medium heat for about 30 seconds on each side until they are pliable.

Fill the Tacos

Place a portion of the chorizo and egg mixture onto each tortilla. Top with optional ingredients such as chopped cilantro, sour cream, sliced avocado, and salsa as desired.

Serve

Fold the tortillas in half and serve immediately while warm. Enjoy your brunch tacos!
