Prepare the Vegetables

Wash the habanero peppers, carrots, onion, and cilantro (if using) thoroughly under cold water. Remove the stems from the habanero peppers, and peel the garlic cloves.

Chop the Ingredients

Chop the carrots, onion, and garlic cloves into small pieces to allow for easier blending.

Cook the Vegetables

In a medium saucepan, combine the chopped carrots, onion, garlic, and habanero peppers. Add the vinegar and salt. Bring the mixture to a boil over medium heat.

Simmer the Mixture

Once boiling, reduce the heat to low and let it simmer for about 20 minutes, or until the carrots are soft.

Remove the saucepan from heat and let it cool slightly. Transfer the mixture to a blender and blend until smooth. If using, add in the sugar, lime juice, and cilantro, and blend again until combined.
