Prepare the Ingredients

Gather all the ingredients and ensure the cheeses are shredded and ready to use. If using jalapeños, slice them thinly.

Heat the Pan

In a large skillet, heat the olive oil or butter over medium heat until melted.

Assemble the Quesadilla

Place one tortilla in the skillet. Sprinkle half of the cheddar and Monterey Jack cheese evenly over the tortilla. If desired, add sliced jalapeños and chopped cilantro on top of the cheese.

Add the Second Tortilla

Top with a second tortilla and press down gently.

Cook the Quesadilla

Cook for about 3-4 minutes or until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla using a spatula.

Finish Cooking

Cook for an additional 3-4 minutes on the other side until it is golden brown and the cheese is fully melted.

Slice and Serve

Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with sour cream and salsa on the side.
