Season the Steak

Pat the ribeye steaks dry with paper towels. Season both sides generously with salt and black pepper. Allow the seasoned steaks to sit at room temperature for 30 minutes.

Heat the Pan

In a large skillet or cast-iron pan, heat the olive oil over medium-high heat until it shimmers.

Sear the Steaks

Add the ribeye steaks to the hot skillet. Sear them for about 4-5 minutes on one side without moving them to form a crust.

Flip and Add Aromatics

Flip the steaks and add crushed garlic cloves and fresh rosemary to the pan. Cook the steaks for another 4-5 minutes for medium-rare, adjusting the time for your desired doneness.

Baste the Steaks

Tilt the pan slightly and use a spoon to baste the steaks with the oil and juices in the pan for added flavor.

Check Temperature

Use a meat thermometer to check for doneness: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.

Rest the Steaks

Remove the steaks from the pan and place them on a cutting board. Cover loosely with foil and let them rest for 5-10 minutes.
