Method
Preparing the Quesadilla
Sauté Vegetables
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and bell peppers. Sauté for about 5 minutes, until they are softened and fragrant.
Combine Ingredients
In a mixing bowl, combine the sautéed vegetables, shredded chicken, salt, and black pepper. Mix well.
Assemble Quesadilla
Place one tortilla in the skillet over medium-low heat. Spread 1 cup of the chicken and vegetable mixture evenly over the tortilla. Sprinkle 1/2 cup of shredded cheddar cheese on top. Place another tortilla on top.
Cook Quesadilla
Cook for 3-4 minutes on one side, until the bottom tortilla is golden brown and the cheese starts to melt. Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is golden brown and the cheese is fully melted.
Slice and Serve
Remove the quesadilla from the skillet and let it cool for a minute. Slice into wedges and serve with sour cream and salsa.

Preheat Oven
Preheat your oven to 425°F (220°C).
Cut Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to form fries.
Season Fries
In a large bowl, toss the cut fries with 3 tablespoons of olive oil, salt, black pepper, and paprika until evenly coated.
Bake Fries
Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, turning halfway through, until they are golden and crispy.
