Pudding Preparation
Mash the Bananas
In a mixing bowl, mash the ripe bananas with a fork until smooth but slightly chunky.
Combine Ingredients
In a medium saucepan, combine the mashed bananas, banana rum, Irish cream liqueur, heavy cream, sugar, vanilla extract, cornstarch, and a pinch of salt.
Cook the Mixture
Over medium heat, stir the mixture constantly until it begins to thicken and bubble. This should take about 10-15 minutes.
Cool the Pudding
Once thickened, remove from heat and let the pudding cool to room temperature before refrigerating for at least 2 hours.
Assembly
Layer the Pudding
In serving glasses or bowls, place a layer of vanilla wafers at the bottom.
Add Pudding
Spoon a generous amount of the cooled banana pudding mixture over the wafers.
Repeat Layers
Repeat the layering process with another layer of wafers and pudding until the glasses are filled.
Garnish
Top with additional sliced bananas and a dollop of whipped cream before serving.
