Method
Burger Patty Preparation
Make the Patty Mixture
In a large mixing bowl, combine ground beef, salt, black pepper, garlic powder, and onion powder. Mix gently with your hands until just combined.
Form the Patties
Divide the mixture into two equal portions and shape each into a patty about 3/4 inch thick. Make a slight indentation in the center of each patty to help them cook evenly.
Cooking the Burger
Cook the Patties
In the same skillet, add the burger patties and cook for about 4-5 minutes on one side. Flip the patties and place a slice of Shropshire blue pepperjack cheese on each patty. Cook for an additional 4-5 minutes or until the cheese is melted and the patties reach your desired doneness.
Chipotle Aioli Preparation
Make the Aioli
In a food processor, combine mayonnaise, chipotle peppers, lemon juice, garlic, and salt. Blend until smooth. Adjust seasoning to taste and set aside.
Assemble the Burger
Build the Burger
Toast the burger buns if desired. On the bottom half of each bun, layer a lettuce leaf, a cooked burger patty with cheese, a slice of tomato, and two slices of crispy bacon. Spread chipotle aioli on the top half of the bun and place it on top to complete the burger.
