Prepare the Batter

In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Whisk together until well mixed.

Add Cold Water

Gradually pour in the cold sparkling water while whisking until the batter is smooth and thick. Set aside.

Heat Oil

In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Fish

Dip each fish fillet into the batter, ensuring it is well coated.

Fry the Fish

Carefully place the battered fish into the hot oil, frying in batches to avoid crowding. Fry for about 4-5 minutes on each side, or until golden brown and crispy.

Drain

Remove the fish from the oil and place on paper towels to drain excess oil.

For the Fries

Prepare the Potatoes

Peel the potatoes and cut them into thick strips (about 1/4 inch wide).

Soak the Potatoes

Soak the cut potatoes in cold water for at least 30 minutes, then drain and pat dry with a towel.

In a deep frying pan, heat the vegetable oil over medium-high heat. It should reach about 350°F (175°C).

Fry the Potatoes

Fry the potatoes in batches for about 5-7 minutes until they are golden and crispy. Remove and drain on paper towels. Sprinkle with salt.

For the Tartar Sauce

Mix Ingredients

In a bowl, combine mayonnaise, chopped dill pickles, capers, lemon juice, and fresh dill. Stir well until all ingredients are fully incorporated.

Chill

Cover the tartar sauce and refrigerate for at least 30 minutes to allow the flavors to meld.
