Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth.

Combine Mixtures

Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are okay.

Heat the Pan

Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

Cook Pancakes

Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.

Serve the pancakes warm with blueberry compote on top.

Combine Ingredients

In a medium saucepan, combine the fresh blueberries, sugar, lemon juice, and water.

Cook the Compote

Bring the mixture to a boil over medium heat. Stir occasionally and let it simmer for about 10-15 minutes, until the blueberries burst and the sauce thickens slightly.

Cool and Serve

Remove from heat and let the compote cool slightly before serving over pancakes.
