Prepare the Vegetables

Rinse all the vegetables under cold water. Trim the ends of the asparagus and cut the zucchini into 1/4-inch thick slices. Remove the seeds from the bell peppers and cut them into strips. Peel the red onion and cut it into wedges. Leave the cherry tomatoes whole.

Make the Marinade

In a large bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and black pepper until well combined.

Combine Vegetables and Marinade

Add all the prepared vegetables into the bowl with the marinade. Toss them gently until all the vegetables are evenly coated with the marinade. Cover the bowl and let it sit for at least 30 minutes to allow the flavors to meld.

Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

Grill the Vegetables

Once the grill is hot, place the marinated vegetables directly on the grill grates. Grill for about 5-7 minutes on each side or until the vegetables are tender and have nice grill marks. You can use a grill basket for smaller items like cherry tomatoes to prevent them from falling through the grates.

Serve

Remove the grilled vegetables from the grill and transfer them to a serving platter. Drizzle with additional olive oil or balsamic vinegar if desired. Serve warm as a side dish or atop a salad.
