Prepare the Sauce

In a saucepan, combine soy sauce, mirin, sugar, and sake. Bring to a simmer over medium heat, stirring until the sugar dissolves completely. Reduce the heat and let the sauce simmer for about 10 minutes until it thickens slightly. Remove from heat and let it cool.

Grill the Eel

Preheat the grill to medium-high heat. Brush the eel pieces lightly with the prepared sauce. Place the eel on the grill and cook for about 3-4 minutes on each side, basting with more sauce occasionally, until the eel is heated through and has nice grill marks.

Prepare the Rice

While the eel is grilling, prepare 4 cups of steamed rice according to package instructions. Keep warm until ready to serve.

Once the eel is cooked, place a serving of steamed rice on a plate. Top with the grilled eel and drizzle with additional sauce. Garnish with pickled ginger, chopped green onions, and sesame seeds. Optionally, serve with nori sheets on the side.
