Method
Prepare the Sushi Rice
Rinse the Rice
Rinse the sushi rice under cold running water until the water runs clear to remove excess starch.
Cook the Rice
In a rice cooker or saucepan, combine the rinsed rice and water. Cook according to the rice cooker instructions or bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
Season the Rice
Once cooked, transfer the rice to a bowl. In a separate bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice using a spatula. Allow to cool to room temperature.
Prepare Mixed Sushi
Assemble Sushi
Lay a sheet of nori on a bamboo sushi mat. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Place fillings in the center and roll tightly away from you using the mat to help.
Cut Rolls
Using a sharp knife, cut the roll into 6-8 pieces. Repeat with remaining ingredients to make 7 pieces of mixed sushi.
Prepare California Roll
Mix Fillings
In a bowl, combine the imitation crab meat with mayonnaise and mix well. Slice the cucumber and avocado into thin strips.
Assemble California Roll
On a sheet of nori, spread a thin layer of sushi rice, sprinkle with sesame seeds, then flip it over. Place the crab mixture, cucumber, and avocado in the center. Roll tightly using a bamboo mat.
Cut California Roll
Cut the California roll into 8 pieces using a sharp knife. Serve with soy sauce, pickled ginger, and wasabi.
