Preparation of Shrimp

Clean the Amaebi

Rinse the amaebi (sweet shrimp) under cold running water to remove any impurities. Pat them dry with a paper towel.

Remove Shells

Carefully peel the shells off the amaebi, leaving the tails intact if desired. Make sure to remove the head and any internal organs.

Brine the Shrimp

Sprinkle 1 tsp of salt evenly over the cleaned shrimp. Let them sit for about 10 minutes to allow the salt to enhance the sweetness.

Chill the Shrimp

Prepare a bowl of ice water. After 10 minutes, place the salted shrimp into the ice water for 5 minutes to stop the cooking process and keep them firm.

Drain and Serve

Remove the shrimp from the ice water, drain well, and arrange them on a chilled plate for serving.

Dipping Sauce

Prepare the Dipping Sauce

In a small bowl, mix together 2 tablespoons of soy sauce, 1 teaspoon of wasabi, and 1 tablespoon of lemon juice. Stir until the wasabi is fully dissolved.
