Preparation

Prepare the Marinade

In a small bowl, mix together the soy sauce, mirin, sesame oil, grated ginger, and minced garlic until well combined.

Marinate the Fish

Place the yellowtail fillets in a shallow dish and pour the marinade over them. Ensure the fish is well coated. Cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Cooking

Sear the Fish

Heat a non-stick skillet over medium-high heat. Remove the yellowtail from the marinade (reserve the marinade) and place the fillets in the skillet. Sear for about 2-3 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

Reduce the Marinade

In the same skillet, add the reserved marinade and bring it to a boil. Reduce the heat and let it simmer for about 5 minutes, or until slightly thickened.

Serving

Plate the Dish

Place the seared yellowtail fillets on a serving plate. Drizzle the reduced marinade over the fish.

Garnish

Sprinkle toasted sesame seeds and chopped scallions over the fish. Add microgreens or fresh herbs on top and serve with lime wedges on the side.
