Prepare the Ricotta Spread
In a medium bowl, combine the ricotta cheese, lemon juice, salt, and black pepper. Whip together until smooth and creamy.
Toast the Noble Bread
Toast the slices of noble bread until golden brown. This will enhance the flavor and provide a nice texture.
Poach the Eggs
Bring a saucepan of water to a gentle simmer. Crack each egg into a small bowl, then carefully slide them into the simmering water. Poach for about 3-4 minutes or until the whites are set but yolks are still runny. Remove with a slotted spoon and drain on paper towels.
Assemble the Tartines
Spread a generous amount of the whipped ricotta on each slice of toasted noble bread. Top with mashed avocado, followed by slices of smoked salmon. Add a few capers on top of the salmon.
Add Poached Eggs
Place one poached egg on top of each tartine. Season with additional salt and black pepper if desired.
Serve with Fruit
Serve the tartines with a cup of the fruit of the day on the side for a refreshing finish.
