For the Herb Roasted Half Chicken
Prepare the Chicken
Preheat your oven to 425°F (220°C). Pat the chicken halves dry with paper towels.
Roast the Chicken
Place the chicken halves in a roasting pan, skin side up. Roast in the preheated oven for about 45-50 minutes or until the internal temperature reaches 165°F (74°C). Let it rest for 10 minutes before serving.
For the Spiced Sweet Potatoes
Prepare Sweet Potatoes
While the chicken is roasting, peel and cube the sweet potatoes.
Season Sweet Potatoes
In a bowl, combine the cubed sweet potatoes with olive oil, ground cinnamon, ground cumin, salt, and black pepper. Toss well to coat.
Roast Sweet Potatoes
Spread the seasoned sweet potatoes on a baking sheet and roast in the same oven for about 25-30 minutes, or until tender and caramelized, stirring halfway through.
For the Cider Braised Brussels Sprouts
Prepare Brussels Sprouts
Trim the ends of the Brussels sprouts and cut them in half.
Braised the Brussels Sprouts
Pour in the apple cider and season with salt and black pepper. Cover and let simmer for about 15-20 minutes until tender, stirring occasionally.
For the Au Jus
Make the Au Jus
In a small saucepan, combine chicken broth and Worcestershire sauce. Bring to a simmer over medium heat, seasoning with salt and black pepper to taste.
Serve the Au Jus
Strain the au jus to remove any solids if desired, and serve it warm alongside the chicken.
