Method
Preparation
Preheat the Oven
Preheat your oven to 425°F (220°C). This high temperature will help to achieve a crispy skin on the chicken.
Prepare the Chicken
Pat the chicken breasts dry with paper towels. This will help the skin crisp up during roasting.
Season the Chicken
In a large bowl, combine olive oil, salt, black pepper, garlic powder, dried thyme, paprika, and lemon juice. Mix well to create a seasoning paste.
Coat the Chicken
Add the chicken breasts to the bowl and coat them thoroughly with the seasoning paste, ensuring they are well covered.
Cooking
Arrange in Baking Dish
Place the seasoned chicken breasts in a roasting pan or a baking dish. If using vegetables, arrange them around the chicken in the same pan.
Roast the Chicken
Roast in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Rest the Chicken
Remove the chicken from the oven and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute.
Serving
Slice and Serve
Slice the chicken breasts and serve them hot with the roasted vegetables on the side, if prepared.
