Prepare and season

Pat the flat iron steak dry with paper towels. Rub evenly with olive oil, then season all sides with salt, pepper, and garlic powder. Let sit at room temperature for 20-30 minutes to enhance flavor.

Preheat and prepare grill or skillet

If using a grill, preheat to high heat and clean the grates. If using a cast-iron skillet, place over high heat and allow it to get very hot until a light haze forms.

Cook the steak

Place the steak on the hot surface. For medium-rare, cook 3-4 minutes per side depending on thickness, flipping once. For medium, 4-5 minutes per side. Avoid pressing down on the steak to keep juices inside.

Rest and finish

Remove steak from heat when it’s 5-10°F below desired final temperature. Optional: place a pat of butter on top and a sprig of thyme or rosemary, cover loosely, and let rest 5-7 minutes to redistribute juices.

Serve

Slice against the grain and serve immediately. Pair with your preferred sides such as mashed potatoes, grilled vegetables, or a simple salad.
