Wash, dry, and prepare all vegetables. Pat greens dry to remove excess moisture; using a salad spinner helps ensure crisp leaves.
Toss the romaine, mixed greens, cucumber, tomatoes, carrot, red onion, bell pepper, and radishes in a large salad bowl until evenly combined.
If using corn, add corn kernels and gently fold into the salad. If adding croutons, sprinkle them on just before serving to maintain crunch. If using feta, sprinkle crumbled cheese on top.
Dress it up
Serve with your choice of dressing (store-bought or homemade). For a simple vinaigrette: whisk together 3 tablespoons olive oil, 1 tablespoon lemon juice or vinegar, 1 teaspoon Dijon mustard, 1/2 teaspoon honey (optional), and salt-and-pepper to taste. Drizzle lightly over salad or serve on the side.
Toss salad lightly after adding dressing to coat greens without wilting. Adjust salt and pepper as needed.
