Preparing the Salad Base

Make the Vinaigrette

In a small bowl, whisk together the Dijon mustard, olive oil, red wine vinegar, salt, and black pepper until emulsified. Set aside.

Prepare the Lettuce

Wash and dry the Bibb lettuce leaves thoroughly. Tear the leaves into bite-sized pieces and place them in a large salad bowl.

Melt the Brie

Preheat your oven to 350°F (175°C). Cut the Brie cheese into wedges and place it on a baking sheet lined with parchment paper. Bake for about 10-12 minutes, or until the cheese is soft and slightly melted.

Combine the Salad

Drizzle the vinaigrette over the prepared Bibb lettuce and toss gently to combine.

Serve

Once the Brie is melted, remove it from the oven and place the warm Brie on top of the dressed lettuce. Sprinkle with sliced almonds and serve immediately.
