Preparation

Prepare the Marinade

In a bowl, combine soy sauce, mirin, sake, and brown sugar. Mix until sugar is dissolved. Add salmon fillets and marinate for at least 30 minutes.

Make Cherry Tonkatsu Sauce

In a small saucepan, combine cherry preserves, soy sauce, rice vinegar, Worcestershire sauce, and minced garlic. Simmer over low heat until thickened, about 10 minutes. Set aside.

Prepare Napa Cabbage Slaw

In a large bowl, mix shredded napa cabbage, julienned carrots, sesame oil, rice vinegar, salt, and pepper. Toss well to combine and refrigerate for at least 20 minutes.

Make Ginger Vin

In a small bowl, whisk together grated ginger, honey, rice vinegar, soy sauce, and sesame oil until smooth.

Cooking

Grill the Salmon

Preheat the grill to medium-high heat. Thread marinated salmon onto skewers. Grill for 3-4 minutes on each side or until cooked through and slightly charred.

Serve

Remove salmon from skewers. Serve with cherry tonkatsu sauce, napa cabbage slaw, and drizzle with ginger vin over the top.
