Preparation Instructions
Prepare the Strawberries
Wash and hull the strawberries. Slice them and mix with 50g of sugar. Set aside to macerate for 30 minutes.
Make the Shortcake
Preheat the oven to 200°C (400°F). In a bowl, mix flour, baking powder, salt, and remaining sugar. Cut in butter until mixture resembles coarse crumbs. Stir in milk until just combined. Turn onto a floured surface and knead gently. Pat into a 2.5 cm (1 inch) thick round. Cut into circles and place on a baking sheet.
Bake the Shortcakes
Bake in the preheated oven for 15-20 minutes or until golden brown. Remove and let cool.
Whip the Cream
In a mixing bowl, whip the heavy cream and vanilla extract until soft peaks form.
Assemble the Shortcake
Slice the shortcakes in half, layer with macerated strawberries and whipped cream. Top with the other half and garnish with additional strawberries and whipped cream.
