Preparation
Prepare the Potatoes
Wash and peel the sweet potatoes and Idaho potatoes. Cut them into uniform fry shapes, approximately 1/4 inch thick.
Soak the Fries
Place the cut fries in cold water and soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.
Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).
Fry the Potatoes
Carefully add the sweet potato fries to the hot oil. Fry for about 4-5 minutes or until golden brown. Remove and drain on paper towels. Season with salt, pepper, and paprika to taste.
Fry Idaho Potatoes
Repeat the frying process with the Idaho potato fries, cooking until they are also golden brown. Drain and season similarly.
Serve
Serve the fries hot, half sweet potato and half Idaho potato, on a platter. Enjoy with your favorite dipping sauces!
