Marinate the Chicken

In a large bowl, combine the buttermilk with salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Coating

In a separate bowl, mix together the all-purpose flour and cornstarch. This will be the coating for the chicken.

Heat the Oil

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Coat the Chicken

Remove the chicken from the marinade, allowing any excess liquid to drip off. Dredge each piece in the flour-cornstarch mixture, ensuring it is thoroughly coated. Shake off any excess flour.

Fry the Chicken

Carefully place the coated chicken pieces into the hot oil. Fry in batches to avoid overcrowding. Cook for about 10-15 minutes or until golden brown and the internal temperature reaches 165°F (74°C).
