Prepare the Caper and Dill Mayo

Make the Mayo

In a bowl, combine mayonnaise, chopped capers, fresh dill, lemon juice, salt, and black pepper. Mix well until all ingredients are thoroughly combined. Set aside.

Prepare the Sandwich

Cook the Salmon

Heat olive oil in a pan over medium heat. Season salmon fillets with salt and pepper. Place salmon in the pan and cook for about 4-5 minutes on each side, or until cooked through and flaky. Remove from heat.

Assemble the Sandwich

Spread a generous amount of the caper and dill mayo on each slice of bread. Place the cooked salmon on two of the slices, top with pea tendrils and pickled red onion. Cover with the remaining slices of bread to form a sandwich.

Serve

Cut the sandwiches in half and serve immediately. Enjoy your delicious salmon sandwich!
