Falafel Preparation
Soak the Chickpeas
In a large bowl, soak the dried chickpeas in water overnight (approximately 8 hours) until they double in size.
Blend Ingredients
After soaking, drain the chickpeas and place them in a food processor. Add parsley, cilantro, garlic, cumin, coriander, salt, and baking powder. Blend until the mixture is coarse but well combined.
Form the Falafel Balls
Using your hands, form the mixture into small balls or patties, about 1 to 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.
Fry the Falafel
In a deep frying pan, heat the olive oil over medium heat. Once hot, carefully add the falafel balls (in batches if necessary) and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Preheat the Oven
Preheat your oven to 425°F (220°C).
Cut the Potatoes
Wash and peel the potatoes. Cut them into thin strips or wedges, depending on your preference.
Season the Fries
In a large bowl, toss the potato strips with olive oil, salt, paprika, and garlic powder until evenly coated.
Bake the Fries
Spread the seasoned potato strips on a baking sheet in a single layer. Bake for 30-35 minutes, flipping halfway through, until crispy and golden brown.
Tehina Sauce Preparation
Mix the Ingredients
In a medium bowl, combine tahini, water, crushed garlic, lemon juice, and salt. Whisk until smooth and creamy.
Adjust Consistency
If the sauce is too thick, add more water, one tablespoon at a time, until you reach your desired consistency.
Taste and Adjust
Taste the tehina sauce and adjust the seasoning, adding more salt or lemon juice as needed.
