Sauté Vegetables

In a large pot, heat the extra virgin olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.

Add Garlic and Spices

Add the minced garlic, diced carrots, diced celery, cumin seeds, paprika, and ground coriander. Cook for another 5 minutes, stirring occasionally.

Brown Chicken

Push the vegetable mixture to the sides of the pot and add the chicken thighs in the center. Brown the chicken on both sides for about 4-5 minutes.

Add Broth and Chickpeas

Pour in the vegetable broth and add the cooked chickpeas. Stir to combine and bring the mixture to a simmer.

Season and Cook

Season with salt and black pepper. Cover the pot and let it simmer for about 30 minutes, or until the chicken is cooked through and tender.

Finish with Garnish

Once cooked, remove the pot from heat. Stir in the chopped parsley and lemon juice before serving.
