Preparation of Quesadilla

Sauté Vegetables

In a skillet, heat olive oil over medium-high heat. Add sliced bell peppers and onions. Sprinkle with fajita seasoning and sauté for about 5 minutes until tender.

Assemble Quesadilla

On one half of each flour tortilla, sprinkle a generous amount of shredded cheese. Top with the sautéed bell peppers and onions. Fold the tortilla over to cover the filling.

Grill Quesadilla

In the same skillet, place the folded tortillas and grill for about 3-4 minutes on each side, or until the tortillas are golden and the cheese is melted.

Plate the Quesadilla

Remove the quesadilla from the skillet and let it rest for a minute. Cut into wedges and serve warm.

Serve with a side of guacamole, shredded lettuce, sour cream, and diced tomatoes for topping.
