Sauté the vegetables
In a large skillet, heat the olive oil over medium-high heat. Add the sliced bell peppers and onions to the skillet. Sauté for 5-7 minutes or until the vegetables are tender and slightly caramelized.
Add the seafood
Add the scallops and crab imitation to the skillet with the sautéed vegetables. Sprinkle in the cumin, chili powder, salt, and black pepper. Stir well to combine and cook for another 5-6 minutes until the scallops are cooked through and opaque.
Add ranchero sauce
Pour the ranchero sauce over the seafood and vegetables, stirring to coat everything evenly. Let it simmer for 2-3 minutes to heat through.
Serving
Warm the tortillas
In a separate skillet or microwave, warm the flour tortillas until they are soft and pliable.
Assemble the fajitas
Serve the seafood mixture on the warm tortillas. You can add any additional toppings like sour cream, guacamole, or salsa if desired. Roll or fold the tortillas and enjoy!
