Prepare the Ingredients

Peel and chop the potatoes, carrots, and celery. Dice the onion and mince the garlic.

Cook the Beef

In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned. Drain excess fat.

Sauté the Vegetables

Add the onion, carrots, celery, and garlic to the pot. Sauté for about 5 minutes until the vegetables are softened.

Add Broth and Seasonings

Stir in the beef broth, tomato paste, thyme, oregano, salt, pepper, and bay leaf. Bring to a boil.

Simmer

Reduce heat and let it simmer for 20 minutes, covered.

Add Potatoes and Peas

Add the chopped potatoes and green peas to the pot. Cook for an additional 15 minutes, or until potatoes are tender.

Serve

Remove bay leaf, sprinkle cheddar cheese on top, and serve hot.
