Preparation of Thermidor Sauce

Sauté Aromatics

In a medium saucepan, melt butter over medium heat. Add the finely chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

Make Roux

Sprinkle the all-purpose flour over the sautéed onions and garlic. Stir continuously for about 2 minutes to cook the flour.

Add Liquids

Gradually pour in the milk and heavy cream, whisking continuously to avoid lumps. Add the white wine and bring the mixture to a gentle simmer.

Thicken Sauce

Keep stirring until the sauce thickens, about 5-7 minutes. Remove from heat.

Incorporate Egg Yolks

In a separate bowl, whisk together the egg yolks, Dijon mustard, and Worcestershire sauce. Slowly add a few spoonfuls of the hot sauce to the egg mixture to temper it, then gradually whisk the egg mixture back into the saucepan.

Season Sauce

Season the sauce with salt and black pepper to taste. Stir in half of the grated cheese until melted and well combined.

Combine and Bake

Prepare Crab Mixture

In a large mixing bowl, combine the crab meat with the prepared Thermidor sauce. Gently fold to combine, being careful not to break up the crab meat too much.

Transfer to Baking Dish

Preheat the oven to 180°C (350°F). Transfer the crab mixture into a greased casserole dish, spreading it evenly.

Top with Cheese

Sprinkle the remaining grated cheese over the top of the crab mixture.

Bake

Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

Garnish and Serve

Once baked, remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
