Method
Preparing the Filet Mignon
Rest the Steaks
Once cooked to your liking, remove the steaks from the grill and let them rest for 5 minutes before serving.
Making the Béarnaise Sauce
Prepare the Shallots
In a small saucepan, combine the finely chopped shallots, white wine vinegar, and dried tarragon. Bring to a simmer over medium heat and reduce until there is about 2 tablespoons of liquid left. Remove from heat and let it cool slightly.
Whisk the Egg Yolks
In a mixing bowl, whisk the egg yolks until they are pale and thick. Add the shallot mixture gradually, whisking continuously.
Combine and Thicken
Place the mixing bowl over a pot of simmering water (double boiler). Whisk continuously while slowly adding the melted butter until the sauce thickens. This should take about 5-7 minutes.
Finish the Sauce
Remove the bowl from heat and stir in the fresh tarragon. Season with salt and black pepper to taste.
