Method
Marinating Chicken
Prepare the Marinade
In a large bowl, whisk together the buttermilk, hot sauce, salt, and black pepper until well combined.
Marinate the Chicken
Add the chicken pieces to the marinade, ensuring they are fully submerged. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
Breading the Chicken
Prepare the Breading Mixture
In a separate large bowl, combine the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper. Mix well.
Coat the Chicken
Remove the marinated chicken from the refrigerator. Remove excess marinade and then dredge each piece in the breading mixture, ensuring it is fully coated. Shake off any excess flour.
Frying the Chicken
Heat the Oil
In a deep skillet or heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
Fry the Chicken
Carefully place the coated chicken pieces in the hot oil, making sure not to overcrowd the pan. Fry for about 12-15 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F/75°C).
Drain and Serve
Once cooked, remove the chicken pieces from the oil and drain on a paper towel-lined plate. Allow to rest for a few minutes before serving.
