Clean the Crawfish

Rinse the live crawfish in cold water to remove dirt and debris. Discard any dead crawfish.

Prepare the Vegetables

Wash the red potatoes and corn on the cob. Cut the potatoes in half if they are large. Slice the smoked sausage into bite-sized pieces. Peel and chop the onion into quarters. Crush the garlic cloves but leave them whole.

Prepare the Seasoning

In a large pot, combine the water, salt, Cajun seasoning, lemon (cut in half), garlic, bay leaves, onion, and black peppercorns. Bring to a boil.

Cooking

Boil the Crawfish

Once the seasoning broth reaches a rolling boil, add the cleaned crawfish. Cover the pot and let them boil for 5-7 minutes.

Add Vegetables and Sausage

After boiling the crawfish, add the red potatoes, corn on the cob, and smoked sausage to the pot. Cover and boil for an additional 10-15 minutes, or until the potatoes are tender.

Let it Sit

Turn off the heat and let the crawfish and vegetables sit in the pot for about 10-15 minutes to absorb the flavors.

Drain and Serve

Carefully drain the crawfish and vegetables. Serve hot on a large platter or newspaper for a traditional crawfish boil experience. Provide extra lemon wedges and dipping sauce on the side.
