Prepare the Fish
Rinse the fish fillets under cold water and pat them dry with paper towels. Season both sides of the fillets with salt and black pepper.
Prepare the Breading
In a large bowl, mix together the flour, cornmeal, baking powder, paprika, and garlic powder. In a separate bowl, whisk together the eggs and milk until well combined.
Heat the Oil
In a large, deep skillet or frying pan, pour in the vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C).
Fry the Fish
Carefully place the coated fillets into the hot oil, a few at a time, without overcrowding the pan. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Use a slotted spoon to remove the fish from the oil and place them on a paper towel-lined plate to drain excess oil.
Serve
