Prepare the Base Layer

Cook Brown Rice

In a medium saucepan, combine 1 cup of brown rice and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 45 minutes or until rice is tender and water is absorbed. Fluff with a fork and set aside.

Prepare the Protein Layer

Marinate Tofu

Press the tofu to remove excess moisture, then cut it into cubes. In a bowl, mix together soy sauce, minced garlic, grated ginger, and sesame oil. Add the tofu cubes to the marinade and let it sit for at least 15 minutes.

Cook Tofu

In a large skillet or wok, heat a tablespoon of oil over medium heat. Add the marinated tofu and cook for about 5-7 minutes until golden brown and slightly crispy. Remove from the skillet and set aside.

Prepare the Vegetable Layer

Sauté Vegetables

In the same skillet, add a bit more oil if needed and toss in the sliced bell peppers, broccoli florets, and sliced carrots. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp. Add chopped green onions and stir for another minute.

Mix Sauce

In a small bowl, whisk together hoisin sauce, chili paste, and rice vinegar. Pour the sauce over the sautéed vegetables and stir well to coat.

Assemble the Stack

Layer the Ingredients

In a serving dish, start with a layer of brown rice at the bottom. Add a generous portion of the sautéed vegetables and then top with the crispy tofu.

Garnish and Serve
